Built on the rim of a submerged volcano, the island sits in a crescent above a flooded caldera — and it's this geology that gives Santorini everything that makes it extraordinary: the dramatic clifftop villages, the black and red sand beaches, the wine made from vines that grow in volcanic ash, and those sunsets above Oia that people genuinely applaud from the terraces.
Where to Stay The caldera villages — Oia, Imerovigli, and Firostefani — are where you'll find the iconic cave suites and cliff-edge villas with infinity pools overlooking the water. Fira is the capital, busier and more commercial but well-connected. Akrotiri in the south is quieter and closer to the best beaches, with views of the caldera from a different angle entirely.
Beaches Santorini's beaches are volcanic and unlike anywhere else in Greece. Perissa and Perivolos on the south-east coast are long stretches of black sand with good tavernas and beach bars. Red Beach near Akrotiri is dramatic — rust-red lava cliffs dropping into clear water. None are the white sand and turquoise water of the Ionian islands, but they're striking in their own way.
Things to Do Walk the caldera path from Fira to Oia — it's 9km, takes around three to four hours, and the views the entire way are extraordinary. Take a boat trip to the volcanic islet of Nea Kameni and swim in the hot springs. Visit the Minoan ruins at Akrotiri, one of the best-preserved Bronze Age sites in the world. For wine, Domaine Sigalas and Santo Wines both offer tastings with caldera views.
Food & Drink Santorini has its own distinct food culture built around volcanic soil produce — the cherry tomatoes here are genuinely different, smaller and intensely flavoured, often served as fritters called tomatokeftedes. Fava, made from yellow split peas grown on the island, is the signature dish. Assyrtiko white wine from local vineyards is crisp, mineral and worth trying properly rather than just as a holiday drink.
When to Go May, June and September are the sweet spot — warm enough to swim, calm enough to actually enjoy the island. July and August are peak season: hot, crowded, and expensive. October is quieter still and the light is beautiful, though some businesses start closing.
